Why We Selected This Wine
Dogma Black Sea Aged is the first Bulgarian wine to be aged at the bottom of the Black Sea. The result is, in addition to accelerating the aging process, increasing freshness, rounding, prolonging the aftertaste and harmonizing the organoleptic elements. In addition to its taste qualities, this extraordinary wine also impresses with its bottle, in which the final touches on the design are the work of the sea itself.
Vinification Philosophy
- The grapes are from the vineyards near the village of Glavan.
- After fermentation, it is aged in stainless steel for 4 months.
- Then another 6 months in the Black Sea after bottling.

Color: The colour is lemon-yellow with greenish hues.
Nose: The abundance of aromas is distinguished by the freshness of white flowers, which captivate with their impeccable beauty and lightness. Delicate nuances of honey are also intertwined, which complement the composition with sweetness and richness. Herbal notes are irresistibly ignited, bringing tangible freshness and spiciness to the nose. It is as if the scent of freshly peeled citrus is spilling onto the palate.
Palate: The taste reveals a garden of citrus fruits with their juicy and aromatic gifts. Temptingly fresh and lively, this finale becomes the one that gives the wine its true brilliance and harmony. After each sip, the feeling is created that the citrus notes leave behind a pleasant aftertaste that spills into the mouth and envelops us with wonderful flavoуr combinations.
Serving: 10–12°C, decanting for 15 minutes
Pairing recommendation
A wonderful combination with soft and creamy cheeses such as goat and brie, pasta with cream sauce, truffle pates, seafood - shrimp, mussels and fish.

Snail Truffle pâté
A good choice for a deeper, velvety finish. The citrus and floral notes in the wine contrast the earthy truffle, and the acidity "cuts" the fat in the pâté.

Zaara Cow's milk cheese with figs
The floral and mineral notes of the Chardonnay enhance the honeyed and fruity nuances of the figs. The acidity of the wine meets the fat of the yellow cheese and refreshes the palate. The figs bring a delicate sweetness to the taste, which adds to the density and aroma of the wine.

Bloc de Foie Gras de Canard de Rois
The freshness of the wine "cuts" the fat, and the sweetness and fruity notes harmonize with the sweetness of the pate.
