Why We Selected This Wine
Dogma Black Sea Aged is the first Bulgarian wine to be aged at the bottom of the Black Sea. The result, beside the accelerated aging process, is increased freshness, rounding, prolonging the aftertaste and harmonizing the organoleptic elements. In addition to its taste qualities, this extraordinary wine also impresses with its bottle, in which the final touches on the design are the work of the sea itself.
Vinification Philosophy
- The grapes are from the vineyards near the village of Glavan.
- After bottling, the wine is aged for 8 months in the Black Sea.

A wonderful combination with mature cheeses, red meats, dry-aged salami, burgers, pâtés and appetizers.
Pairings from Sip ’n Bite

Snail's and porcini mushroom Pâté
The earthy and umami flavours of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, while the creaminess of the pâté softens the tannins.

Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.

Elena Dry Aged Pork Leg
The bite highlights the peppery and earthy character of the wine and brings a good balance between saltiness and fruitiness. The fat in the meat softens the tannins in the wine and gives it a velvety feel.
