Why We Selected This Wine
After more than 10 harvests of vinification with aging in Bulgarian oak, they decided to show the “authentic” face of their terroir for the first time. An old vine carries wisdom and can tell a magical tale, gathered in a glass of wine, in a way that a young vine could not.
Vinification Philosophy
- Cold maceration: 24 – 72 hours
- Aging: 11 months in stainless steel

Natural wine without stabilizers, sulphites and allergens.
Pairing recommendation
A perfect combination with barbecued red meats, mature cheeses, mushroom dishes, grilled vegetables, pâtés and appetizers.
Pairings from Sip ’n Bite
Curated gourmet pairings that highlight the wine's profile and structure — available for takeaway and tasting at Sip ’n Bite

Delicatess "Tsonevo"
The wine refreshes the palate after fatty bites while the savoury meats highlight the wine's dark fruit and earthy complexity.

Snail's and porcini mushroom Pâté
The earthy and umami flavoуrs of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, and the creaminess of the pâté softens the tannins.

Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.
