Why We Selected This Wine
A natural wine that reveals a character different from most Cabernet Sauvignon wines. It has an extraordinary freshness and naturalness, and the barrels used to age the wine add additional touches and a unique overall feel.
Vinification Philosophy
- The wine has minimal influence and use of mechanical means.
- Entirely artisanal and a product of manual labour.
- It has not undergone a filtration process, so it could contain a significant amount of noble sediment.
- It has undergone a process of violent fermentation in vessels with an open cap with daily stirring.
- The quiet fermentation was carried out directly in oak barrels.

Color: The wine has an intense ruby colour.
Nose: The nose reveals juicy berries - blackberries, blueberries, earthy and floral notes, chocolate, vanilla, cloves and cinnamon from the wood.
Palate: The wine is complex, but still retains its freshness, well-balanced, with a full body and a long finish.
Serving: 14–16°C, decanting for 30 minutes
Natural wine without stabilizers, sulphites and allergens.

Elena Dry Aged Pork Leg
