Why We Selected This Wine
A wine in which a Greek variety - Assyrtiko, a French one - Viognier and two local varieties for the Struma River Valley - Sandanski Misket and Keratsuda coexist. The grapes come from one of the highest vineyards in Bulgaria - at 600 m altitude in the village of Ilindentsi. All these factors add to the unique character of the blend.
Vinification Philosophy
- Limited yields from 600 m altitude vineyards near the village of Ilindentsi
- Minimal intervention and sulphites
- 6 months on fine lees in stainless steel tanks

Zaara Cow's milk cheese with figs
The intense fruity and floral notes of the wine enhance the honeyed and fruity nuances of the figs. The acidity of the wine meets the fat of the yellow cheese and refreshes the palate. The figs bring a delicate sweetness to the taste, which adds to the density and aroma of the wine.

Zaara Cow's milk cheese with herbs
The herbal and grassy notes of the wine meet the spices of the yellow cheese and complement and enhance each other. The freshness in the wine "cuts" the fat in the yellow cheese and refreshes the palate.

Snail Truffle pâté
A good choice for a deeper and velvety finish. The citrus and floral notes in the wine contrast the earthy truffle, and the acidity "cuts" the fat in the pâté.
