Why We Selected This Wine

Rubin is a Bulgarian red variety created as a crossing of the French Syrah and the Italian Nebbiolo. It is one of the grapes that carries a distinctly local identity within modern Bulgarian wine.

In this wine from Wine Cellar Oriahovitza, the site, vineyard practices, harvest timing and oak regimen shape a very specific expression: fruity, structured and clearly defined.

Oriahovitza Rubin 2023 is a strong example of how a contemporary Bulgarian variety can feel both local and refined.

Vinification Philosophy

  • The variety quickly accumulates sugars but also loses acidity relatively fast, which makes the exact harvest time critically important due to the short period of technological ripeness.
  • Oryahovitsa Rubin matures for 10 months in French oak barrels, from which aromas of vanilla, lilac, and a slight spiciness emerge.

Pairing recommendation
Aged cheeses, cured meats and dishes with deeper, gently spiced flavors. Its fruit profile and structure also allow it to work nicely with mushrooms, roasted vegetables and richer meat dishes.

Green cheese
Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.
Lamb sausage
Lamb sausage
A good choice for a deeper, velvety finish. The citrus and floral notes in the wine contrast the earthy truffle, and the acidity "cuts" the fat in the pâté.
Snail Truffle pâté
Snail Truffle pâté
