Why We Selected This Wine

A classic Bulgarian wine from one of the oldest Bulgarian varieties Mavrud. The vineyards of the small boutique winery Nitchev are located in the village of Zlatovrah, Asenovgrad region and are over 60 years old and with extremely reduced yields per decare to 250 kg. This gives a unique character to this Mavrud from a classic Bulgarian region. As an addition to its character, it was aged for 36 months in new French oak barrels of 225 l.

Snail's and porcini mushroom Pâté
Snail's and porcini mushroom Pâté
The earthy and umami flavoуrs of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, and the creaminess of the pâté softens the tannins.
Green cheese
Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.
Elena Dry Aged Pork Leg
Elena Dry Aged Pork Leg
The bite highlights the peppery and earthy character of the wine and brings a good balance between saltiness and fruitiness. The fat in the meat softens the tannins in the wine and gives it a velvety feel.
