Why We Selected This Wine
Wine from the micro-producer Monteremi (Na Bair Loze), located in the village of Elhovo near Stara Zagora. The wines are in limited batches, following biodynamic and natural practices. Therefore, each bottle and vintage carries its own unique character and terroir imprint.
Vinification Philosophy
- Pinot Noir variety, Dijon 115 and 777 branches, grown in Sredna Gora
- Northeast exposure, 400 m above sea level, shallow cinnamon soils, leached-cinnamon forest soils with a significant presence of calcareous rocks.
- From organic grapes, spontaneous fermentation with wild yeasts, unfiltered, unadulterated.
- An initially hot season turned into a moderate autumn, but was interrupted twice, in July, by significant
- hail.
- After careful selection, only the few completely healthy bunches were left to ripen for our Bohem, with harvest in mid-September. Fermentation with 20% bunches, for about 3
- weeks.
- Aging of the wine for 18 months in new oak barrels.

Color: The wine has a medium-intensity ruby colour.
Nose: On the nose, subtle aromas of red fruits, earthy notes, minerality and light smokiness intertwine.
Palate: The solid structure characteristic of the vinification is remarkable, initially embracing red and berry fruits, oak notes and sweetness, which add sharpness and complexity. Expected for the coming years, continued development in the bottle with increasing aroma and flavoуr balancing the body and overall sensory perception.
Serving: 13–15°C, decanting for 15 minutes

Snail's and porcini mushroom Pâté
The earthy and umami flavoуrs of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, and the creaminess of the pâté softens the tannins.

Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.

Lamb sausage
Highlights the wine’s spice notes and creates a balanced interplay of savoуry and fruit. The fat in the sausage softens the tannins in the wine and gives it a velvety feel.
