Why We Selected This Wine
A wine that presents a classic Bordeaux variety under the light and touch of the cool Black Sea region. Usually part of blends, here the variety gains its own expression and contributes to an emblematic and authentic style not only for Bulgaria, but also for the specific terroir of the Northeast.

Pairings from Sip ’n Bite
Curated gourmet pairings that highlight the wine's profile and structure — available for takeaway and tasting at Sip ’n Bite

Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.

Snail's and porcini mushroom Pâté
The earthy and umami flavoуrs of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, and the creaminess of the pâté softens the tannins.

Lamb sausage
A good choice for a deeper, velvety finish. The citrus and floral notes in the wine contrast the earthy truffle, and the acidity "cuts" the fat in the pâté.
