Why We Selected This Wine

Cabernet Franc Reserve 2023 comes from the vineyards of Gorun Winery, located on chernozem soils on calcareous-loess substrates with excellent drainage and deep water reserves. The airy relief and constant air currents from the Iskar River valley create natural regulation of the vineyards and favor uniform phenolic ripening.

Vinification Philosophy

  • The limestone component and the microelement-rich chernozem in the soil build structure and mineral precision, while the loess contributes to finesse and aromatic purity.
  • Deep rooting (moisture at 80–100 cm) ensures stability and natural concentration in the grapes.
  • The location of the terrain - 180 m. above sea level, 5 km from the Iskar River and 27 km. from the Danube River, forms a specific microclimate - air currents, good spring moisture storage, hot and dry summers with large day-night temperature amplitudes, which contribute to the fresh and clearly expressed fruity character of the wine.
  • Manual harvest and strict selection, short cold maceration and long post-fermentation to extract aroma and colour.
  • Alcoholic fermentation at a controlled temperature. Moderate extraction for finesse, non-aggressive structure. Malolactic fermentation in a controlled environment.
  • After completion of fermentation, it ages for approximately one year in stainless steel on fine lees, then 12 months in 225 L French barriques.
  • Precise selection of barrels to create a wine with structural depth, but without weight – concentrated, but elegant.
  • The 2023 vintage is characterized by a good balance between sugar ripeness and preserved freshness. Phenolic ripening was achieved without overripening, which allows for the development of a mature tannin structure while maintaining elegance.

Color: The wine has an intense ruby ​​colour.
Nose: Complex and multi-layered nose. Ripe tones of black cherry, blackberry and blackcurrant intertwine with the classic varietal green pepper, graphite and subtle spiciness. Oak aging develops nuances of cedar, roasted almond and delicate cocoa, which add depth without dominating the fruit. The aroma is clean, focused and with a clear varietal character.
Palate: A dense, concentrated and balanced wine with a ripe, velvety tannic texture. The oak is integrated and contributes to volume and structural harmony. The finish is long, persistent and complex, with hints of spice, nutty nuances and a mineral accent.Potential: 10+ years of development in bottle.
Serving: 14–16°C, decanting for 30 minutes
