Why We Selected This Wine
Wine from the only producer in Bulgaria of the Trakiyska Slava variety - Divinex winery. The cross between Pamid and Mavrud is an interesting combination of the characteristics of both varieties - the softness and fruitiness of Pamid are combined with the structure and body of Mavrud. A wine that is ready to drink now, but can also age for a few more years.
Vinification Philosophy
- The Trakiyska Slava variety was selected at the Vasil Kolarov Winery in Plovdiv, by crossing the Pamid and Mavrud varieties.
- The vineyards of the Divinex winery, planted with the variety, are located near the village of Lesichevo, Pazardzhik region.
- The wine is aged in used oak barrels for 6 months.

Color: The wine has a deep ruby colour.
Nose: The nose reveals aromas of red and dark berries, spiciness and spices.
Palate: The palate repeats the aromas and flavours from the palate. The sensation is velvety and fruity, with ripe and balanced tannins and a pleasant, long finish.
Serving: 14–16°C, decanting for 30 minutes

Snail's and porcini mushroom Pâté
The earthy and umami flavoуrs of the porcini mushrooms and snails are complemented by the complex, slightly earthy and fruity characteristics of the wine, and the creaminess of the pâté softens the tannins.

An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.

Elena Dry Aged Pork Leg
The bite highlights the peppery and earthy character of the wine and brings a good balance between saltiness and fruitiness. The fat in the meat softens the tannins in the wine and gives it a velvety feel.
