Why We Selected This Wine

A wine produced under the watchful eye of the world-renowned French wine consultant Michel Rolland. He consulted over 200 wineries in 14 different countries and works in almost all Bordeaux appellations. Castra Rubra is the only winery in Bulgaria with which he works. His philosophy is that a winery can be competitive at a global level only and only when it produces high-quality wines in large batches. Applied in this wine, which makes it unique in Bulgaria - a symbol of guaranteed quality in large quantities.

  • The grape varieties are in equal proportions in the blend: 33% Cabernet Sauvignon ; 33% Merlot & 33% Cabernet Franc
  • Barrel fermentation
  • 24 months aging in new French oak barrels
  • Alternating stainless steel vessels and barrels during aging for better integration of oak aromas and tannins

Color: The wine has a tawny colour.
Nose: On the nose could be felt juicy forest berries and plum marmalade, chocolate, mocha are felt. Development in the bottle adds tertiary nuances such as tobacco, graphite, smokiness, which mix with pepper, liquorice, sweetness and spiciness.
Palate: The wine is developed, dense, with well-integrated tannins, velvety softness, complexity and a long and expressive finish.
Serving: 14–16°C, decanting for 60-120 minutes

A suitable combination with barbecue, game, pasta with tomato sauce and veal, roast lamb and mature cheeses.
