Why We Selected This Wine
Genuine and memorable, Bulgar Merlot is a child of Southern Bulgaria - produced as a private project to impress and caress the palate. A 6-month aging in French oak barrels gives it incredible complexity and a depth of flavoуrs. Bulgar Merlot is inspired by the hero of Aleko Konstantinov - Bay Ganyo. It expresses the same unforgettable persistence, intensity, and blissful sweetness as the character from the novel.
Vinification Philosophy
- The grapes are from legendary 60-year-old vineyards in South Sakar.
- The wine ages for 6 months in French oak barrels.

Pairings from Sip ’n Bite
Curated gourmet pairings that highlight the wine's profile and structure — available for takeaway and tasting at Sip ’n Bite

Green cheese
An intense and salty accent that sits well with the fruity and structured red profile and makes the tannins feel soft and velvety. The acidity in the wine refreshes and balances the fats.

Lamb sausage
Highlights the wine’s spice notes and creates a balanced interplay of savoУry and fruit. The fat in the sausage softens the tannins in the wine and gives it a velvety feel.

Snail Truffle pâté
A good choice for a deeper and velvety finish. The fruit notes in the wine contrast the earthy truffle, and the acidity "cuts" the fat in the pâté.
